Blue Sky Organic Farms Broccoli & Cauliflower Salad is the perfect recipe to use your broccoli and cauliflower in! It gives you a new way to use up those veggies and spice up your routine. Try it out using the recipe below!
Broccoli and Cauliflower Salad
By Blue Sky Organic Farms
Serves: 6—8
Ingredients
3 c broccoli florets
3 c cauliflower florets
1 apple ~ diced
1 carrot ~julienned
1/4 c chopped red onion
1 c roasted and salted cashews
1/2 c dried cranberries or raisins
Dressing:
1/2 c mayo
1/2 Greek yogurt
2 TBSP rice wine vinegar
1/4 c honey
Instructions
- In a small bowl combine all ingredients for dressing.
Set aside.
- In a medium bowl combine all ingredients except for cashews.
Pour dressing over salad and toss to coat.
- Refrigerate for at least an hour before serving.
- Right before serving stir in cashews.
Notes:
You can substitute Romanesco for the cauliflower.
You can also use all broccoli or all cauliflower.
If you are using unsalted nuts add about 1/4 tsp of salt to the Dressing.
