Whole Roasted Cauliflower

I never know what to do with cauliflower! Usually I only eat it when it’s mixed with other vegetables, simply because it’s very plain and lacks flavor. Well, the solution to that is right here! Try this delicious roasted cauliflower recipe that uses garlic, basil, oregano, and black pepper.

 

Whole Roasted Cauliflower

Serves 6

 

Ingredients

 

  • 1 head of cauliflower
  • 6 TBSP butter
  • 2 tsp chopped garlic
  • 2 tsp salt
  • 2 tsp dried basil
  • 1 tsp dried oregano
  • ½ tsp black pepper

 

Instructions

 

Pre-heat oven to 400*.

Combine butter and seasoning in a small sauce pot and cook over medium heat until butter is melted.

Remove from heat.

Remove outer leaves from the cauliflower keeping the stem intact.

Place cauliflower in a 9×13 baking dish.

Pour butter and herb mixture over the top.

Cover with foil and bake for 30 minutes.

After 30 minutes uncover and bake for an additional 10 minutes.

Serve immediately.

 

Recipe Notes:

 

Cauliflower should be almost fork tender after the 30 minutes.  If not cover and cook for an additional 5 minutes.

You can substitute olive oil for the butter.
