Registered dietitians say that while white and sweet potatoes are popular and nutritious, people should not forget about purple potatoes, which RD Valerie Agyeman says have three times more antioxidants than white or yellow potatoes.
Plus, according to registered dietitian nutritionist Molly Knudsen in MindBodyGreen because purple potatoes get their pigment from antioxidant-rich anthocyanins, they may “protect heart health, help prevent high blood pressure, and promote cognitive and eye health.”
Regardless the purple potato continues to gain in popularity. Between 2000 and 2017, annual consumption in the US doubled, to 8 pounds per capita.
This rise in popularity has also spurred production in the U.S. If the public demands it, our American agriculturalists will grow it.
