Eggs – A Nutritional Powerhouse

By Heide Kennedy, Arizona Farm Bureau Communications Intern

Eggs have long been a symbol of spring. This is because spring is a season that is bursting with life, as winter is ending, meaning plants are beginning to bud again, animals are beginning to come out of hiding, and new ones are being born. But besides just being a well-known symbol of springtime, eggs are actually a nutritional powerhouse that has so many different uses!

In regard to nutrition, eggs are a great source of so many nutrients! These include but are not limited to:

  • Good Cholesterol
  • Vitamins A, B, D, E, and K
  • Omega-3 fatty acids
  • Fats – mainly unsaturated
  • Protein

Also, according to the United States Department of Agriculture, one large-sized egg only has about 71 calories, less than 1 gram of carbohydrates, and less than 1 gram of sugar!

So, this makes eggs a great source of nutrition, as they provide you with a great source of protein, fats, and vitamins all while being lower in calories, carbohydrates, and sugar.

Luckily eggs are incredibly versatile. While they are often a popular breakfast food or in baking, eggs can be eaten for any meal! For some delicious recipes that use eggs, check out the following recipes from Fill Your Plate!
